Chicken Mushroom Stew

1 1/2lb boneless, skinless Chicken breast halves

2T cooking oil, divided

8oz sliced, fresh mushrooms

1 med. onion, diced

3c diced zucchini

1c diced green pepper

4 garlic cloves, minced

3 med tomatoes, diced

6oz tomato paste

3/4c water

2t salt, optional

1t ea. thyme, oregano, marjoram, basil

* Cut chicken into 1″ cubes; brown in 1T oil in a large skillet.

Transfer to a slow cooker.

In the same skillet, saute mushrooms, onion, zucchini, green pepper and garlic in remaining oil til crisp-tender.

Place in slow cooker.

Add tomatoes, tomato paste, water and seasonings.

Cover & cook on low for 4hours or til vegy’s are tender.

I grew up going to school every day and learning what I was told to learn in whatever way the teacher chose to present it. Thankfully for me, I learn easily in most modalities. It wasn’t until my husband and I were homeschooling our kids that we realized just how important learning styles are for kids being academically successful. In school, teachers often use multiple modalities to try to make sure all learning styles are covered and help kids succeed. At home, we have the “luxury” of being able to work with our kids individually.Catherine Martin
